Chef Keanan McDonald

Keanan has been a founding member of our team since we opened in 2013 where his first job was at front of house. Keanan’s passion and flair  for good food very soon became apparent and he quickly moved into being an integral part of the kitchen team. Keanan seamlessly became part of our kitchen team and always enjoyed his work while improving his culinary knowledge and thinking about the customer. Keanan helps plan a varied seasonal menu for the café, catering and events, making maximum use of local and seasonal fresh produce .His main passion is pastry and he is in charge of the production of all the amazing cakes you can see on our display every day.

Evelina Makovskiene

Front of house Manager

Evelina relocated from Kaunas is the second-largest city in Lithuania to Ireland in 2004 where she quickly started working in the hospitality industry. Evelina joined our team in 2022 where her nearly 20 years of experience made her a vital part of our team. Our main aim at Thatch and Thyme has always been to create a welcoming, friendly space in the café. Customers and staff alike often comment on how Evelina’s receives, welcomes, and relays the requests of diners at our restaurant, and  always with a smile. Even at the busiest of times Evelina’s impressive ability to remain composed makes her a wonderful front of house manager.
